Teas and Tisanes (Herbal Infusions)

Most drinks are mostly water and it is the way we flavour the water that makes it more valuable. For instance soda pop/soft drinks are mostly water and so is whiskey but the difference in the price per litre is quite significant.

All teas and tisanes are basically flavoured water. The tea plant originated in China.

Earth’s General Store carries teas and tisanes/infusions from virtually every corner of the globe.

Teas

All real “teas” whether white, green, oolong or black come from one plant species – camellia sinensis. The myriad difference in flavours are created by the growing environment, picking times, and the processing technique. The variations and nuances in flavours is very similar to those found in the coffee world.

White Teas

White tea has the highest levels of antioxidants. We carry two type of White Tea but due to its price will probably not reorder the Silver Swallow from Fujian Province in China.

Oolong Tea

When I was doing my tea education for a tea business I had I was told that oolong tea was a type of tea that occupied the space between white tea and green tea. Less oxidants than white though more than green, more processed than white but more than green, and more pronounced flavours than white but less than green.

We only carry one oolong tea.

Green Teas

Green tea has become very popular over the past decade or more due to its reputed health benefits. It does have significant levels of antioxidants and less caffeine than black tea.

  • Genmaicha Japanese ‘Popcorn Tea’ Organic  – This tea is the type of tea that is usually served in every Japanese restaurant. This unusual Japanese tea, is prepared by first steaming the tea leaves, then after drying, they are combined with roasted rice. The result is an amber brew with a toasty and lightly sweet flavour. Genmaicha may be re-infused with hot water for a second or third cup. These second and third pourings are often considered to be the superior cups. Infuse for 3 minutes or more. Serve without milk or sugar. At present our Genmaicha tea is grown organically in China under Japanese supervision for export to the global market AND JAPAN. The reason why is because of the higher than acceptable levels of Cesium in the Japanese soil following the Fukushima nuclear disaster. Japanese consumers choose to have the product grown in China under organic conditions than in Japan and be exposed to possible nuclear residues.

Black Tea

This is the tea that most of our culture drink. The tea that gets served in all the cafes and gets heavily advertised. This is your Orange Pekoes, your Red Rose, etc. type of teas.

They provide heavier, earthier, fuller flavours of all the types of teas. They still have antioxidants but not as much as the other types of teas. They have higher levels of caffeine that the the white, green and oolong teas.

  • Assam Banaspathy Fair Trade Organic – Located in the Northeastern part of India, close to the Chinese, Bangladeshi and Burmese borders, the Assam Valley plays a major role as a tea producer. This flavourful caramel-coloured tea from the Banaspaty Estate is an ideal addition to your breakfast. Steep for 3-5 minutes. Serve with a dash of honey or a splash of milk.

Tisanes/Infusion/Herbal Teas

Well if you take any vegetable matter and put it into boiling water you are creating a Tisane/Infusion.

When you infuse leaves in boiling water from the camellia sinensis plant you will be making a ‘tea’. When you infuse leaves (peppermint, rooibos, etc), roots (licorice, dandelion, ginger, etc), bark (cinnamon), wood matter (twig tea), dried fruit, seeds (toasted rice), fungi (chaga) or flowers (chamomile, hibiscus, etc) from any another plant you are making a tisane or infusion. Sometimes these are referred to as herbal teas.

People have been infusing plant matter in heated water for thousands of years for their healing, meditative, medical, spiritual, cultural, and/or that it just tastes good.

Earth’s General Store is proud to offer the excellent herbs grown organically right here in Alberta by Chickadee Farm Herbs. They grow both Culinary Herbs and herbs for making herbal teas.

  • Alfalfa – yes! The stuff that farm animals eat during the winter. Alfalfa is a nutritional powerhouse. High in protein it also provides Vitamins A, D, E and even K as well as a good showing from all the vitamins in the B family. Alfalfa has a nice assortment of minerals including iron, potassium, magnesium, calcium, biotin and folic acid. Alfalfa has been used for several ailments and afflictions including: balancing hormones, lowering cholesterol levels, as a diuretic, lowering blood pressure, and for achy/sore joints. You can consult with a naturopathic doctor, herbalist or do some self-guided research on the internet.
